Posttraumatic Cooking Disorder, that is. I thought I would never enter the kitchen again after my last cooking fiasco. Thankfully I was wrong. The recipe on the can of Libby’s pumpkin has been tempting me for months. It took a visit from Matt’s out-of-town nephew this weekend to help me conquer my fear. Here is a picture* of my dessert:

I’ve had that before! My friend’s sister-in-law made it for a baby shower. It was SO good! I tried to make it, but mine didn’t look anywhere near as good as yours does. I may just have to try it again, though!
I was inspired initially by a friend who brought over a pumpkin roll for a game night. I was very worried that I wouldn’t be able to live up to her standard. I think mine turned out pretty close though.

MMmmm…yummy! Well done, Allison – it looks lovely! Pumpkin Rolls are my favorite. I make several every year for a good friend of mine. She is terrified of attempting to assemble one so I make them for her. They are NOT easy…you have to roll them ever so delicately.

Looks great and I’m sure it was tasty too! We had one given to us once. Except they rolled the wax paper up in it. We realized it when we ate it. (the paper!)

It wasn’t too difficult. I followed the directions very carefully (which is not always the case)…the trickiest part was rolling the cake before cooling it. You have to be very cautious not to make the cake break when you’re rolling it.

ohhhhh myyyyyyy goddddddddddddddddd…I had a very unsatisfying “healthy” dinner tonite, and now I’m just sitting here worried that my laptop isn’t covered in tarp, since I’m currently drooling all over it….
What better to complete a healthy dinner than a scrumptious pumpkin roll?

I did it and I am so excited. Mr J said it is now his most favorite dessert. We tried to only eat one slice each, but kept returning to the kitchen for more. Thank you again, this recipe is awsome!

That looks really yummy. I love just about anything with Pumkin.
